Grilled cheese pesto flat

Remove stalk from flat mushrooms. Lightly spray both sides with olive oil. Top mushrooms with dollop of basil pesto, chopped semi dried tomatoes and thinly sliced mozzarella cheese. Grill until cheese is melted and oozy, serve immediately.

A great Sunday night snack.
