Healthy tip!

Did you know that mushrooms are a rich source of fibre, to keep us healthy on the inside.

Satay mushroom sauce

Saute mushrooms and finely chopped red onion in olive oil and garlic until tender. Add half cup satay sauce and a drizzle of reduced fat coconut milk, simmer until thick, serve over grilled chicken.

Praw and Mushroom salad

Thinly slice button mushrooms and place into a large bowl. Pour over your favourite dressing, cover and allow to stand for 30 minutes. Add diced avocado, thinly sliced green onions and peeled cooked prawns and you have a delicious salad!

 

Sweet chilli sauce

Pan-fry thinly sliced red onion in oil until soft. Add mushrooms and a good splash of sweet chilli sauce and cook until mushrooms are tender. Spooner over char-grilled chicken, lamb or beef skewers.
