Satay mushroom sauce
Saute mushrooms and finely chopped red onion in olive
oil and garlic until tender. Add half cup satay sauce
and a drizzle of reduced fat coconut milk, simmer
until thick, serve over grilled chicken.
Praw and Mushroom salad
Thinly slice button mushrooms
and place into a large bowl. Pour over your favourite
dressing, cover and allow to stand for 30 minutes.
Add diced avocado, thinly sliced green onions and
peeled cooked prawns and you have a delicious salad!
Sweet chilli sauce
Pan-fry thinly sliced red onion
in oil until soft. Add mushrooms and a good splash
of sweet chilli sauce and cook until mushrooms are
tender. Spooner over char-grilled chicken, lamb or
beef skewers.
