Mushroom Dip
Saute chopped cup mushrooms,
crushed garlic and chopped green onions in butter
until soft. Allow to cool, drain off excess liquid.
Use pulse button on food processor to process until
finely chopped. Stir in thick greek-style yoghurt,
chopped parsley and a dollop of Dijon mustard.
BBQ Asian-style Mushrooms
Toss sliced cup or flat mushrooms
with olive oil, freshly grated giner, hoisin or plum
sauce. Saute on a hot bbq plate until tender and serve
over lamb, chicken or fish. Your
family will love them!!
Mushroom and peanut lettuce
cups
Combine 1/4 cup each lime juice,
sweet chilli sauce, fish sauce and peanut oil, stir
to combine. Pour over halved button mushrooms, cover
and allow to stand 30 minutes to absorb the dressing.
Add handful of chopped coridander, salted peanuts,
spoon into lettuce leaves and enjoy!
